Study of Seven Moroccan Honeys Finds Mineral Content Triples by Type

A jar of rosemary honey and a jar of multifloral honey from the same corner of eastern Morocco can hold three times the difference in mineral content, even though both bees drew from the same soil and climate.
A chemical analysis of thirty five honey samples from eastern Morocco found that mineral content and sugar composition both track closely with the plant source. Multifloral honey averaged 661 milligrams of minerals per kilogram, the highest of the seven types tested, while rosemary honey averaged 201 milligrams per kilogram, the lowest. Potassium made up about two thirds of the mineral total across all samples, with calcium, magnesium and iron accounting for most of what remained.
Researchers from Mohammed First University in Oujda, working with collaborators in Belgium and Italy, gathered honey from beekeepers around Oujda, Berkane, Jerada, Nador and Taourirt. They measured nine minerals and heavy metals by atomic absorption spectroscopy and profiled ten sugars by gas chromatography, covering jujube, multifloral, citrus, eucalyptus, thyme, Carob (Ceratonia siliqua) and rosemary honey. A statistical technique called principal component analysis then tested whether the chemical data alone could sort the samples by floral origin, without being told the answer in advance.
It could. Multifloral and eucalyptus honeys grouped together on the strength of their iron, magnesium and calcium content, while rosemary honey stood apart, marked by comparatively low potassium and higher zinc and copper. Sugar profiling added a second layer to the same picture. Every type contained the same core sugars, fructose, glucose, maltose, turanose, erlose, sucrose and palatinose, but the proportions varied: multifloral honey had the highest combined fructose and glucose content, at nearly 76 percent, comfortably above the European Union's minimum threshold, while eucalyptus honey had the lowest total sugar content, just over 68 percent. Heavy metals told a reassuring story on their own. Lead and cadmium stayed well under European Union limits across every sample tested, pointing to production in a relatively unpolluted environment.
The study measured composition only, mineral levels, sugar content and trace metals, not any biological or health effect of the honey. It also covers a single region over one harvest period, so it speaks to how honey types differ from each other locally more than to how eastern Moroccan honey compares with honey from elsewhere.
