Our Bioactivity Score

Not all honey is the same.

Honey can exceed every quality standard and still have a negligible bioactive value. Factors such as botanical source, location, soil & climate all make a difference.  

Tayab tests every batch and assigns a Honey Bioactivity Index (HBI) — a classification based on independently measured phenolic content and antioxidant activity, calibrated against published academic research and historical data points.

From mountain valleys to desert plains, Morocco's remarkable ecological diversity produces honeys that differ not only in flavour and colour, but also in their natural bioactive composition.

Sidr Ziziphus lotus
Oriental Region Semi-arid valleys and rocky limestone slopes where wild Sidr trees grow under hot summers, cool winters and limited rainfall.
Flowering season May – June Altitude 600–1,100 m Honey character Rich and rounded with notes of caramel, dried fruit and warm spice. Smooth, lingering finish.
Daghmous Euphorbia resinifera
Béni Mellal–Khénifra, Azilal Grows on remote limestone slopes of the Central High Atlas, where endemic Daghmous shrubs flourish in dry, rocky mountain terrain.
Flowering season April – June Altitude 800–1,900 m Honey character Powerful herbal aroma with resinous notes, with a uniquely fiery sensation in the throat
Carob Ceratonia siliqua
Rif Mountains Grows in Mediterranean limestone woodlands of northern Morocco, where ancient carob trees thrive in warm, dry conditions.
Flowering season August – October Altitude 200–800 m Honey character Dark, malty and full-bodied with notes of cocoa, toasted caramel and molasses. Low perceived acidity.
Zantaz Bupleurum spinosum
Middle Atlas & High Atlas Grows in alpine meadows and high mountain pastures of the High Atlas, flourishing above the tree line in a short flowering season.
Flowering season June – August Altitude 1,400–2,100 m Honey character Deep amber with complex herbal, woody and lightly balsamic notes. Persistent, aromatic finish.
